Dallas Sushi Chef – Yong Cheng
Chef Yong was trained to make sushi as teenager by his Uncle at Yoshi’s Japanese Cuisine in New York. In 2003-2004 Chef Yong Cheng apprentice with Sushi Chef Master Tein Jiang. Master Jiang trained Chef Yong the techniques of true Sushi Chefs. Chef Yong has worked as a Sushi Chef for many Asian cuisine restaurants including: Zenna’s Thai and Japanese Restaurant of Plano, TX, Luck Wok of Allen, TX, Grand China Philadelphia, PA. Currently Chef Yong Cheng works as a private sushi chef and co-owner of Kaizen an on sight sushi catering team.

I’m planning a wedding for March and considering having a sushi station as part of the earlier evenings festivities- appetizers….I was wondering what your rates might be? There will be between 200-250 people there. Do you charge per person/ or per quantity (a good portion of our guests are midwesterners and not exactly the sushi type)?

I’m trying to land my first big deal in the first week of Feb this year. There will be two venues to cater. The first and most important will be for a small group of 7 investors plus 3(Legal rep, Bean counter and a Consultant). It will be for about 2 to 3 hours at the hotel where 4 of the investors will be saying at. That will be 11 for sure unless the 3 local partners decide to bring dates. So if you can shoot me some numbers for a party of 11(guarantied) and/or up to 18. Send the prices for a party with a sushi chef and assistant (bar/server/busser) and for just the sushi platters alone.
The second party will be at my home on Oram St. near Skillman Ave. for approximately 30 to 40 people from around 6pm to 10pm. No sushi chef needed just one person to work my bar, explain the sushi and serve the party. You can email this information to NviroGreen@gmail.com.
